Frituras de Bacalao (Codfish fritters)

A crispy and savory fritter.

Ingredients
  

  • 1 lb of cod fish
  • 4 eggs beaten
  • 6 tbsp flour
  • 1 tbsp baking soda
  • 3 tbsp minced onion
  • 2 tbsp chopped parsley
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/8 tsp Old Bay seasoning optional

Method
 

Prepare the fish
  1. Boil cod over medium heat uncovered until fully cooked.
While the fish is cooking
  1. Use a food processor to mince 1/2 an onion or enough to yield 3 tablespoons.
  2. Chop the parsley finely.
  3. Mix the dry ingredients together thoroughly.
  4. Beat the eggs in a separate bowl and set aside.
Making the fritters
  1. Place cooked fish into a bowl and when it is cool enough to handle, shred the fish by hand or with a fork.
  2. Mix the minced onion together with the fish, then stir in the eggs and mix thoroughly.
  3. Stir in the flour mixture, mix thoroughly.
Frying
  1. Take the fritter mix by the spoonful and drop the balls into a fryer with pre-heated oil. Fry over medium to medium high heat until golden brown.
  2. Carefully remove from fryer with a slotted spoon and place on paper towels to absorb the excess oil.

Notes

Serve with cocktail sauce or tartar sauce and lime wedges.
